Recipe: Quinoa, Apple & Walnut Salad with Turkey Sausage

Salads are best when they are simple – just a few ingredients, thrown together in an unexpected, well-balanced combination. This one is popular in our house because it is easy, healthy, and very filling.

Ingredients:

  • 1/2 cup cooked quinoa (a high-protein grain found in the rice section)
  • 4 oz lean turkey sausage (I used the same hot Italian sausage mentioned a few posts back)
  • 1 diced apple
  • 1/4 cup walnut pieces
  • fresh spinach

Instructions:

  1. Cook quinoa and sausage according to directions.
  2. Chop sausage and apple into bite sized pieces
  3. Combine all ingredients in large bowl and drizzle your favorite dressing on top (a light and tangy vinaigrette is perfect), toss until well coated.

    2. i make a salad similar to this, with spinach/baby greens, green apples, carrots, craisins, pecans, sliced turkey, and a drizzle of olive oil and balsalmic vinegar…yummy and great for lunch!

Part of the inspiration was that so many of my great friends are far away, and thus the lunches and shopping trips that typically led to sharing these things were few and far between. And Kristin – that salad sounds delicious! Do you use deli turkey or grill turkey cuts?
